Ingredients

  • 2 egg whites
  • 1/2 tsp. cream of tartar
  • 1/4 c. sugar
  • salt
  • 1 c. white Karo

Instructions

  1. Put the egg whites, cream of tartar, sugar, a pinch of salt, and Karo syrup in the top of a double boiler.
  2. Place over boiling water and beat at high speed with a hand mixer for 4 minutes.
  3. Remove from heat and use immediately to frost a 2 or 3 layer cake.

Tips & Substitutions

For best results, use room temperature egg whites as they whip up better. If you don't have cream of tartar, lemon juice can be a substitute to stabilize the egg whites. Make sure your mixing bowl and beaters are clean and free of grease to achieve maximum volume. This frosting can be a great topping for desserts like the American recipes featured in Animal Pancakes.

Serving Suggestions

This frosting is perfect for a 2 or 3 layer cake, adding a light and fluffy finish. Consider using it on a chocolate cake for a delightful contrast. It also pairs beautifully with desserts like Lite Creamy Spinach Dip for a whimsical dessert platter. Garnish with sprinkles or toasted coconut for added texture.

Storage & Reheating

Four Minute Frosting is best used immediately, as it can lose its texture over time. If you need to store leftovers, place them in an airtight container in the refrigerator for up to 2 days. To reheat, gently warm in a double boiler while whisking until it regains its fluffy texture. Avoid microwaving as it can alter the consistency.

Four Minute Frosting can be sensitive to heat and humidity. If serving outdoors, try to keep the cake in a shaded area and serve it as close to frosting time as possible. Consider using a buttercream or cream cheese frosting for warmer climates, as they tend to hold up better.
