Freezer Cucumber Chips

Ingredients

  • 4 c. thinly sliced cukes (3 medium)
  • 2 c. thinly sliced onions
  • 1 Tbsp. salt
  • 1 c. water
  • 1 small hot chili pepper, sliced (optional)
  • 1 c. sugar

Instructions

  1. Combine the first 4 items.
  2. Let stand 2 hours.
  3. Drain and squeeze veggies to extract moisture.
  4. Add chili pepper, sugar and vinegar.
  5. Stir to dissolve sugar.
  6. Spoon into freezer containers; cover tightly and freeze at least overnight.
  7. Thaw 4 hours before serving, then store in refrigerator.
  8. Makes 3 pints.
