Instructions
- Combine the first 4 items.
- Let stand 2 hours.
- Drain and squeeze veggies to extract moisture.
- Add chili pepper, sugar and vinegar.
- Stir to dissolve sugar.
- Spoon into freezer containers; cover tightly and freeze at least overnight.
- Thaw 4 hours before serving, then store in refrigerator.
- Makes 3 pints.
