Ingredients

  • 3 c. peeled, grated zucchini
  • 1/2 c. water
  • 3 c. sugar
  • 2 Tbsp. lemon juice
  • 1 c. crushed pineapple
  • 3 oz. pkg. apricot or peach jello

Instructions

  1. Cook the peeled, grated zucchini and water for 15 minutes, stirring constantly.
  2. Add the sugar, lemon juice, and crushed pineapple, and boil for 8 minutes.
  3. Remove from heat and stir in the jello mix.
  4. Let the mixture set until cool.
  5. Pour into small containers and freeze.
