Ingredients

  • 3 pkg. dry yeast
  • 4 1/2 c. very warm water
  • 12 c. flour
  • 3 Tbsp. sugar
  • 4 1/2 tsp. salt
  • 3 Tbsp. shortening

Instructions

  1. Sprinkle yeast in 1/2 cup warm water in a bowl and let sit until foamy.
  2. Mix sugar and salt into 4 cups warm water until dissolved.
  3. Add shortening and the yeast mixture to the water and mix well.
  4. Add flour gradually and mix until a dough forms.
  5. Knead the dough until it is not sticky, about 10 minutes.
  6. Place the dough in a greased bowl, turn to coat the surface with oil, and cover.
  7. Punch down the dough every 10 minutes for a total of 5 times, then let rest, covered, for 10 minutes.
  8. Shape the dough into loaves by rolling out into rectangular shapes and then rolling into loaves.
  9. Cut diagonal slashes across the top of each loaf.
  10. Let the loaves rise until doubled in size.
  11. Bake at 400°F (200°C) for 35 minutes until golden brown.
