French Shortcake

Ingredients

  • 1/2 c. margarine or butter
  • 3/4 c. sugar
  • 4 egg yolks (set aside whites)
  • 1 1/4 c. flour
  • 1/2 tsp. salt
  • 2 1/2 tsp. baking powder
  • 1/2 c. milk
  • 1/2 tsp. vanilla
  • 4 egg whites
  • 1/8 tsp. cream of tartar

Instructions

  1. Cream margarine, sugar and egg yolks.
  2. Combine flour, salt and baking powder.
  3. Add flour mixture to creamed mixture with milk and 1 teaspoon vanilla; mix well.
  4. Pour batter in greased 9 x 13-inch pan.
  5. Set aside.
  6. Beat egg whites with cream of tartar and 1/4 teaspoon vanilla.
  7. When whites reach a peak, fold in 1 cup sugar. Spread on top of unbaked cake mixture.
  8. Bake at 350° for 30 minutes.
  9. Serve with strawberries or any fresh fruit.
