Ingredients

  • 1 gallon beets
  • 1 quart vinegar
  • 1 quart water
  • 3 cups sugar
  • 3 teaspoons mixed pickling spices
  • 1 teaspoon salt

Instructions

  1. Mix vinegar, water, sugar, pickling spices, and salt in a saucepan and bring to a simmer.
  2. Simmer for 10 minutes to infuse flavors.
  3. Add the beets to the simmering mixture.
  4. Simmer for 15 to 20 minutes or until beets are tender, being careful not to overcook.
  5. Transfer the beets and pickling liquid into desired containers and seal.
