Fresh Cranberry Jam

Ingredients

  • 3 cups fresh cranberries
  • 3 3/8 tablespoons port wine
  • 1 cup brown sugar
  • 1 piece fresh ginger grated
  • 1 cinnamon stick
  • 1 clementine zest and juice
  • 1/4 teaspoon vanilla paste

Instructions

  1. In a large saucepan, over medium heat, add all the ingredients. Stir until the fruit macerates, sugar melts and all is well combined.
  2. When the mixture begins to boil, lower the heat and stir constantly for 20 minutes. Remove the cinnamon stick.
  3. If preferred puree with a hand blender until smooth.
  4. Pour the jam into a sterilized jar. Cool and refrigerate.
  5. Serve cold.
