Ingredients

  • 2 qt. sliced cucumbers
  • 1 onion
  • 2 Tbsp. salt
  • 1 1/2 cups sugar
  • 1/2 cup vinegar

Instructions

  1. Mix together sliced cucumbers, chopped onion, and salt in a large bowl.
  2. Let stand in the refrigerator for 24 hours.
  3. Drain the mixture without rinsing.
  4. Add sugar and vinegar to the drained cucumbers and onion.
  5. Let stand another 24 hours in the refrigerator, stirring occasionally, then they are ready to eat or freeze.
