Ingredients

  • 1 deep dish pie shell, baked and cooled or 1 graham cracker crust
  • 8 oz. Cool Whip, thawed
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 2 cups fresh fruit (peaches or strawberries)
  • 1 cup water
  • 1/2 cup sugar

Instructions

  1. Prepare the pie crust and let it cool if baked from scratch, or use a pre-made graham cracker crust.
  2. Mix the thawed Cool Whip with 1/2 cup sugar and 1/2 cup sour cream gently until combined.
  3. Spread the mixture evenly in the bottom of the prepared crust.
  4. Prepare the fresh fruit by washing and slicing if necessary.
  5. In a small pan, combine 1 cup water, 1/2 cup sugar, and 1/2 package of gelatin. Add cornstarch gradually, stirring to remove lumps.
  6. Bring to a boil and cook until thickened. Allow to cool slightly.
  7. Add the cooled gelatin mixture to the prepared fruit and mix well.
  8. Pour the fruit mixture over the cream layer in the crust.
  9. Chill the pie for several hours until set before serving.
