Ingredients

  • 1/2 small pineapple
  • 1/2 medium papaya
  • 1/2 lb. Granny Smith apples
  • 1 small red pepper, chopped
  • 1 small green pepper, chopped
  • 1/4 c. rice vinegar or white wine vinegar
  • 2 Tbsp. sugar
  • 1 Tbsp. fresh cilantro

Instructions

  1. Halve pineapple lengthwise.
  2. Remove and discard peel, leaves and core.
  3. Cut in 1/2-inch cubes.
  4. Halve papaya lengthwise; remove and discard seeds.
  5. Pare and cut in 1/2-inch cubes.
  6. Halve apple; remove and discard core and peel.
  7. Cut into 1/2-inch cubes.
  8. In a medium bowl, combine fruit and remaining ingredients.
  9. Mix well. Cover and refrigerate.
