A vibrant, refreshing grapefruit salad with pineapple, perfect for a light, fruity dessert or appetizer that impresses with its tangy sweetness and colorful presentation.

Ingredients

  • 6 small grapefruit
  • 1 (15 1/4 oz.) can crushed pineapple

Instructions

  1. Scoop out sections of fruit from the grapefruit halves and remove the membranes.
  2. Drain the grapefruit sections and save the juice.
  3. Combine the grapefruit juice with the pineapple juice and add enough water to make 5 cups.
  4. Heat 2 cups of this liquid to dissolve the gelatin.
  5. Add the rest of the liquid to the fruit and mix well.
  6. Spoon the mixture into the grapefruit shells or into a shallow pan.
  7. Refrigerate until the gelatin is firm.
  8. Serve one shell per person or cut the gelatin into squares and serve on lettuce.
