Ingredients

  • 1 lb. cooked asparagus
  • 1 or 2 beaten eggs

Instructions

  1. Remove water from cooked asparagus and let it set for a few minutes.
  2. Dip each piece of asparagus into beaten eggs.
  3. Roll each egg-coated asparagus in crushed crackers on a waxed paper.
  4. Place the coated asparagus in a buttered hot frying pan.
  5. Cook until crisp on both sides.
