Ingredients

  • 1/2 lb. butter
  • 1 cup sugar
  • 5 eggs
  • 1 3/4 cups plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 lb. candied pineapple
  • 1 lb. glazed cherries
  • 4 cups chopped pecans
  • 1 tablespoon vanilla
  • 1 tablespoon lemon flavoring

Instructions

  1. Cream the butter; add sugar gradually, creaming until fluffy.
  2. Add beaten eggs to the creamed mixture and blend well.
  3. Chop candied pineapple, glazed cherries, and pecans.
  4. Sift plain flour; measure and sift again with baking powder.
  5. Mix the chopped fruit and nuts into the sifted flour.
  6. Fold the flour mixture into the butter and egg mixture until well combined.
  7. Add vanilla and lemon flavoring, mixing thoroughly.
  8. Pour the batter into a greased, paper-lined tube pan.
  9. Place the pan in a cold oven and bake at 250°F (120°C) for about 2 1/2 hours.
