Fried Bay Scallops

Ingredients

  • olive oil
  • 1 lb. fresh bay scallops
  • 1/3 c. flour
  • salt and pepper
  • parsley
  • lemon slices

Instructions

  1. Pour 1/2-inch oil into skillet.
  2. Heat to very hot; drain scallops and pat dry.
  3. Dust scallops with mixture of flour, salt and pepper.
  4. Check proper temperature of skillet by dropping in one scallop.
  5. If it immediately turns golden brown, the temperature is right.
  6. Add remaining scallops and cook for 2 to 3 minutes, turning to brown on all sides.
  7. Remove scallops with slotted spoon and drain on paper towel.
  8. Serve immediately. Garnish with parsley and lemon slices.
  9. Excellent with good Muscadet or Chablis Grand Cru.
