Ingredients

Instructions

  1. For fried chicken, remove skin.
  2. Salt and pepper and flour chicken pieces.
  3. Dip in buttermilk and repeat by dipping in flour. Place in electric skillet which has 1-inch hot oil.
  4. Cover with lid.
  5. Brown on one side and turn.
  6. Brown other side.
  7. For last few minutes, leave lid off pan while frying to make chicken crisp. Lid on makes chicken tender and cooks through.
  8. To test for doneness, press fork tines next to bone in center.
  9. If no red rises to top, chicken is done.
