Fried Chicken Batter Coating

Instructions
- For fried chicken, remove skin.
- Salt and pepper and flour chicken pieces.
- Dip in buttermilk and repeat by dipping in flour. Place in electric skillet which has 1-inch hot oil.
- Cover with lid.
- Brown on one side and turn.
- Brown other side.
- For last few minutes, leave lid off pan while frying to make chicken crisp. Lid on makes chicken tender and cooks through.
- To test for doneness, press fork tines next to bone in center.
- If no red rises to top, chicken is done.
