Ingredients

  • 4 eggs
  • 1 small can tomatoes or 4 fresh tomatoes, quartered
  • sprinkle of onion or garlic powder
  • 1/2 tsp. dried basil
  • pinch of salt and pepper
  • 1 Tbsp. olive oil

Instructions

  1. Beat eggs lightly in a bowl; set aside.
  2. In a large frypan, place olive oil and heat.
  3. Cook tomatoes with onion or garlic powder, dried basil, salt, and pepper until tomatoes are cooked, about 15 to 20 minutes.
  4. Stir in the beaten eggs and keep stirring until mixture thickens like scrambled eggs.
  5. Serve over toast slices.
