Ingredients

  • partridge
  • baking soda
  • water
  • butter and oil for frying
  • salt to taste
  • 1 egg, beaten
  • flour

Instructions

  1. Boil
  2. cleaned breast in 1 tablespoon of baking soda and 3 inches
  3. of water
  4. in
  5. pan.
  6. Boil small breast 10 minutes or large breast 15 minutes.
  7. Dry and cut into pieces and debone. Coat meat with egg and then in flour.
  8. Next, fry in butter and 1 tablespoon oil; fry until tender.
