Ingredients

  • squash or eggplant
  • 3 Tbsp. salt
  • 1 egg
  • 1 cup biscuit mix
  • 1/2 cup milk

Instructions

  1. Peel and cut squash or eggplant into large strips resembling large French fries.
  2. Soak the strips in 3 tablespoons of salt water for at least 15 minutes.
  3. In a bowl, mix 1 egg, salt, pepper, and sugar to taste.
  4. Combine 1 cup biscuit mix and 1/2 cup milk in a separate bowl.
  5. Dip the soaked squash or eggplant strips in the egg mixture, then coat with the biscuit mix mixture.
  6. Deep fry the coated strips until golden brown and crispy.
  7. Serve hot and enjoy.
