Friendly Garlic Chicken features tender chicken thighs infused with roasted garlic and herbs, creating a savory, aromatic dish perfect for comforting family dinners or entertaining guests.

Ingredients

  • 3 large heads garlic (about 40 cloves)
  • 2 Tbsp. virgin olive oil
  • 2 tsp. virgin olive oil
  • 8 chicken thighs, skinned
  • 1 cup chopped parsley
  • 3/4 tsp. salt
  • freshly ground pepper

Instructions

  1. Preheat oven to 375°F.
  2. Separate garlic into cloves and blanch in boiling water for about 30 seconds.
  3. Run garlic under cold water, trim tops and bottoms, and slip off skins.
  4. Pour olive oil into a 3-4 quart casserole dish with a tight-fitting lid.
  5. Add garlic to the dish and toss to coat with oil.
  6. Add chicken thighs and turn to coat with oil.
  7. Scatter chopped parsley over the top and sprinkle with salt, pepper, and nutmeg.
  8. Cover and bake for 1 hour.
