Ingredients

  • 2 c. chicken broth
  • 1 c. uncooked regular rice
  • 2 Tbsp. butter
  • 1/3 c. pine nuts or shelled sunflower seeds
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. grated lemon peel

Instructions

  1. Bring chicken stock to a boil in a saucepan.
  2. Stir in rice, cover, and simmer for 15 to 20 minutes until all liquid is absorbed.
  3. Meanwhile, melt butter in another saucepan over low heat.
  4. Cook and stir pine nuts or shelled sunflower seeds in butter until golden brown.
  5. Stir in chopped parsley, grated lemon peel, and lemon juice.
  6. Pour the nut, butter, and lemon mixture over the hot rice and stir to coat.
