Ingredients

  • 24 oz cream cheese
  • 1 1/3 cup sugar
  • 5 eggs
  • 1 1/2 teaspoon vanilla
  • 2 cup sour cream

Instructions

  1. Cream the cream cheese and 1 cup sugar until smooth.
  2. Beat in eggs one at a time, then add 1 1/2 teaspoons vanilla extract.
  3. Spoon the mixture into a muffin tin, filling about 2/3 full.
  4. Bake for 40 minutes at 300°F (150°C). Remove from oven and cool.
  5. Meanwhile, combine sour cream, 1/3 cup sugar, and 1/2 teaspoon vanilla.
  6. Top each cooled cheesecake with the sour cream mixture.
  7. Return to oven and bake for an additional 5 minutes.
  8. Cool completely and top with fruit or pie filling before serving.
