A refreshing molded salad combining tangy lemon Jell-O, crunchy cucumber, and creamy cottage cheese, ideal for light lunches, buffets, or summer dinners with a savory twist.

Ingredients

  • 3 oz. lemon Jell-O
  • 1 tsp. Knox gelatine
  • 1/4 cup cold water
  • 1 cup hot water
  • 1 cup cottage cheese
  • 1 cup mayonnaise
  • 1/2 tsp. salt
  • 1 tsp. vinegar
  • 2 Tbsp. chopped pimientos
  • 1 medium cucumber, grated
  • 2 Tbsp. grated onion

Instructions

  1. Dissolve the Knox gelatine in 1/4 cup cold water.
  2. Mix the dissolved gelatine with the lemon Jell-O and 1 cup hot water; let it cool.
  3. Add salt and vinegar to the cooled mixture and stir well.
  4. Add cottage cheese, mayonnaise, grated cucumber, chopped pimientos, and grated onion; mix thoroughly.
  5. Pour the mixture into a mold and refrigerate until set.
