Sweet, chewy fruit leather made from fresh blended fruit, ideal for snacks and lunchboxes. Customizable with your favorite fruits and a touch of natural sweetness.

Ingredients

  • 2 cups fresh fruit (strawberries, grapes, apples, etc.)
  • 1 tablespoon lemon juice

Instructions

  1. Select a ripe or slightly overripe fruit.
  2. Sort and wash the fruit. Remove blemishes.
  3. Peel, pit, hull, seed, and core fruit as necessary.
  4. Cut fruit into pieces and place in a blender.
  5. Add 1 tablespoon of lemon juice per 2 cups of fruit to prevent browning.
  6. Blend until smooth.
  7. If the puree is tart, add 1 tablespoon sugar, corn syrup, or honey for each 2 cups of fruit.
  8. Most fruits do not need added sugar.
  9. Heat oven to 140°F (60°C).
  10. Line a cookie sheet with plastic wrap or spray with a vegetable spray.
  11. Do not use waxed paper or aluminum foil.
  12. Spread the fruit puree evenly on the prepared cookie sheet.
  13. Tilt the sheet back and forth to smooth out any ripples.
  14. Place the cookie sheet in the oven.
  15. Leave the door slightly open (approximately 2 to 6 inches) to allow humid air to escape.
  16. To test for dryness, loosen the edge of the leather from the sheet and lift as if to peel back.
  17. Properly dried leather is slightly sticky to the touch.
