Joyce's Caramel Corn offers a rich, buttery caramel coating with a hint of vanilla, perfectly crunchy and sweet — ideal for snacking or sharing at gatherings.

Ingredients

  • 2 c. brown sugar
  • 1/2 c. white Karo syrup
  • 1 c. oleo
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. soda
  • 7 qt. popped corn
  • 1 lb. blanched nuts

Instructions

  1. Mix brown sugar, white Karo syrup, oleo, and salt together and boil for 5 minutes.
  2. Add vanilla and soda; this will cause the mixture to fizz.
  3. Spray a large metal dishpan or mixing bowl with Pam spray.
  4. Pour the syrup mixture over 7 quarts of popped corn and blanched nuts.
  5. Mix well together and place in a 250°F oven for 45 minutes, stirring every 10 minutes.
