A versatile fruit vinegar infused with fresh berries or stone fruits, perfect for dressings, marinades, or adding a tangy twist to beverages, appealing to fruit lovers and cooks alike.

Ingredients

  • 1 lb fresh fruit such as raspberries, blueberries, apricots or figs
  • 5 c white wine vinegar
  • 1 Tbsp sugar

Instructions

  1. Combine fruit and vinegar in a sterilized glass jar with airtight seal.
  2. Leave in warm place to steep.
  3. Shake jar occasionally.
  4. Strain fruit and vinegar into a saucepan, pressing to extract flavor from fruit.
  5. Add 1 tablespoon sugar and stir to blend.
  6. Place mixture over low heat and simmer for 10 minutes.
  7. Transfer to sterilized jars.
  8. For a more attractive presentation, add a few fresh berries or pieces of fruit.
