Ingredients

  • 3 c. rhubarb
  • 5 1/2 c. sugar
  • 1/2 bottle Certo
  • 3/4 c. water
  • 2 drops red coloring

Instructions

  1. Add water to rhubarb and simmer until soft.
  2. Measure 3 cups of the rhubarb mixture into a large pan.
  3. Add sugar and ginger, then mix well.
  4. Bring to a rolling boil and boil for 1 minute, stirring constantly.
  5. Remove from heat and add Certo.
  6. Stir and cool slightly.
  7. Put the marmalade into warm, clean jars and skim foam from the top.
  8. Add hot paraffin at once.
  9. Cool and allow to set.
