Ingredients

  • 16 oz. pared sweet potatoes, cut into 1-inch pieces
  • 2 Tbsp. water
  • 12 dried apricot halves, chopped
  • 1 small Granny Smith apple, pared, cored and chopped
  • 2 Tbsp. raisins
  • 1/4 c. orange juice
  • 1 oz. orange flavored liqueur
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • dash of salt

Instructions

  1. In a 2-quart microwavable casserole, combine sweet potatoes with water.
  2. Cover and microwave on High 10 minutes or until potatoes are tender, stirring once.
  3. Add remaining ingredients: chopped apricots, chopped apple, raisins, orange juice, orange flavored liqueur, cinnamon, nutmeg, and salt.
  4. Stir well to combine, then cover and microwave on High 3 minutes or until apple is tender-crisp.
