Garlic Lover'S Potatoes

Ingredients

  • 1 lb. new potatoes
  • 1 tsp. olive oil
  • 4 cloves garlic, peeled and thickly sliced
  • 1 Tbsp. minced shallots
  • 1/8 tsp. salt
  • pepper to taste

Instructions

  1. Scrub potatoes well.
  2. If large, cut into thick slices.
  3. Steam for about 7 minutes or until they are firm but slightly tender. Pour oil into a casserole dish.
  4. Add the steamed potatoes, garlic, shallot, salt and pepper.
  5. Toss well to mix.
  6. Bake, uncovered, in preheated 350° oven for 30 minutes.
  7. Stir a couple of times while baking so potatoes cook evenly.
  8. If desired, garnish with freshly chopped rosemary or parsley.
