Ingredients

  • 1 (1.25 lb.) package refrigerated mashed potatoes
  • 1 cup sour cream
  • 1/3 cup grated Parmesan cheese
  • 2 large cloves garlic, finely chopped
  • 20 frozen potato wedges with skins
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. Spray a 9 x 1 1/2-inch quiche dish with nonstick spray.
  3. Mix the mashed potatoes, sour cream, 1/3 cup Parmesan cheese, and chopped garlic in the dish; spread evenly.
  4. Arrange the frozen potato wedges in a spoke fashion around the mixture, with 2 wedges in the center.
  5. Sprinkle 2 tablespoons of Parmesan cheese over the top.
  6. Bake for 25 to 30 minutes.
  7. Sprinkle with chopped chives before serving.
