- Beat egg whites and cream of tartar until foamy.
- Gradually beat in sugar, one tablespoon at a time, until the mixture is stiff and glossy.
- Ensure the meringue is very stiff but not dry.
- Spoon the meringue evenly over the filling of a 9-inch pie in an ovenproof glass or ceramic dish.
- Attach the meringue to the edge of the crust to prevent shrinking during cooking.
- Do not spread the meringue too smoothly.
- Place the pie on the center rack in the microwave.
- Cook on medium (50%) power for 3 to 4 minutes until the meringue is set.
- Brown the meringue for 4 to 5 minutes until golden brown.
