Garlic Potatoes For Two

Garlic potatoes for two are tender, flavorful, and perfect as a side dish. The garlic and green onion add a fresh, savory touch to these simple, comforting potatoes.

Ingredients

  • 5 oz. small new potatoes, unpeeled and quartered lengthwise
  • 2 cloves garlic, halved
  • 1/2 tsp. salt
  • water
  • 1 Tbsp. margarine, softened
  • 2 tsp. finely chopped green onion

Instructions

  1. Place potatoes, garlic, and salt in a small saucepan.
  2. Add water to cover and bring to a boil.
  3. Cover the pan loosely and cook for 8 to 10 minutes or until tender.
  4. Drain, reserving the potatoes and garlic. Remove garlic and crush with the flat side of a knife.
  5. Combine crushed garlic with butter and green onion.
  6. Add the garlic mixture to the potatoes, tossing lightly to coat.
