- In a large bowl, mix together salsa, tomato juice, 1/2 cup diced cucumber, yellow pepper, 1 tsp lime zest, 2 tbsp lime juice, cayenne and cilantro. Season. Chill for 1 hour.
- Meanwhile, cut 3 inch long matchsticks from remaining cucumber. Distribute between shot glasses then pour in gazpacho.
