Ingredients

  • 2 cups chunky tomato salsa
  • 8 oz tomato juice
  • 1 None small cucumber
  • 1 None small yellow pepper, diced
  • 1 None lime, zested and juiced
  • 1 pinch cayenne
  • 1/4 cup chopped fresh cilantro leaves

Instructions

  1. In a large bowl, mix together salsa, tomato juice, 1/2 cup diced cucumber, yellow pepper, 1 tsp lime zest, 2 tbsp lime juice, cayenne and cilantro. Season. Chill for 1 hour.
  2. Meanwhile, cut 3 inch long matchsticks from remaining cucumber. Distribute between shot glasses then pour in gazpacho.
