Genuine Fig Preserves

Genuine fig preserves offer a sweet, rich flavor with natural fig sweetness complemented by lemon slices, ideal for spreading on bread or serving with cheeses.

Ingredients

  • 4 qt. ripe figs
  • 5 lb. sugar
  • 2 lemons, sliced

Instructions

  1. Wash well and select ripe, firm figs.
  2. It is not necessary to peel the figs; stems can be left on.
  3. Cover the bottom of a large enamel boiler with a layer of sugar.
  4. Put a layer of figs on top of the sugar.
  5. Alternate layers of figs and sugar until all are used, ending with a layer of sugar.
  6. Ensure sugar covers all the figs.
  7. Cover the boiler and refrigerate overnight.
