Ingredients

  • 2 Tbsp. vinegar
  • 2 Tbsp. Worcestershire
  • 3/4 c. ketchup
  • 1 tsp. chili powder
  • 1 tsp. paprika
  • 1/2 tsp. black pepper
  • 3/4 c. water
  • 2 lb. boneless chuck roast
  • 2 Tbsp. fat
  • 2 medium onions

Instructions

  1. Combine vinegar, Worcestershire, ketchup, chili powder, paprika, black pepper, and water in a saucepan; bring to a boil and remove from heat.
  2. Salt the roast to taste, then braise on both sides in hot fat until browned.
  3. Place the roast in a roasting pan on a piece of foil large enough to cover.
  4. Top with hot sauce and sliced onions.
  5. Seal the foil and bake in a 300°F (150°C) oven for 2 1/2 to 3 hours, or until the meat is tender, basting frequently with the sauce.
