Gin Soaked Potatoes

Ingredients

  • 5 lb large red potatoes; quartered
  • 3/4 oz rosemary; minced
  • 1 tbsp fresh thyme; minced
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 cup gin
  • 1 vegetable oil; as needed
  • 1 salt and pepper

Instructions

  1. Soak potatoes in gin overnight.
  2. Drain.
  3. Let air dry briefly before drying potatoes.
  4. Toss with vegetable oil.
  5. Season.
  6. Roast at 400 for approximately 45 minutes or until potatoes are caramelized and fork tender.
