Ingredients

  • 1 1/2 lb chicken wings
  • 3/4 cup water
  • 6 Tbsp soy sauce
  • 4 Tbsp sugar
  • 2 Tbsp sake
  • 1 thin slice fresh ginger
  • 1 Tbsp cornstarch

Instructions

  1. Pat the wings dry and season lightly with salt if desired.
  2. In a small bowl, whisk together 3/4 cup water, 6 Tbsp soy sauce, 4 Tbsp sugar, 2 Tbsp sake, and the thin slice of fresh ginger.
  3. Place the wings in a pressure cooker, pour the sauce mixture over them, and seal the lid.
  4. Cook on high pressure for 2 to 3 minutes.
  5. Release the pressure and let the wings steam for 10 to 15 minutes to absorb the glaze.
  6. Remove the wings from the cooker, discard the ginger slice, and serve warm.
