- Soften yeast in water.
- Heat mandarin juice just to lukewarm. Add sugar, salt, mandarin peel and butter.
- Add egg, half of flour and softened yeast.
- Beat until well blended and thick.
- Add remaining flour and mix to moderately stiff dough.
- Turn out and knead lightly on floured board just until dough smoothes out and forms ball.
- Cover with dampened cloth; let rest 20 minutes.
