Ingredients

  • 3 cups milk
  • 1/2 cup rice
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup boiling water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash rice several times in cold water.
  3. Put hot water into the outside part of a double boiler.
  4. Put rice in the inside part with salt and boiling water.
  5. Boil for 30 minutes with the lid on.
  6. While rice boils, heat 3 cups of milk in a separate pot.
  7. Grease a casserole dish with butter.
  8. Add boiled rice and milk to the dish, then add sugar and stir.
  9. Bake for 30 minutes until a light crust forms.
  10. Remove from oven and stir the crust into the pudding.
  11. Add vanilla flavoring.
  12. Bake again until a light crust forms.
  13. Remove from oven and cool before serving.
