- Add the corn meal gradually to the milk, stirring constantly to prevent lumping.
- Cook over moderate heat for at least 15 minutes until the mixture thickens.
- Add butter, sugar and salt; set aside for a few moments while you beat the egg yolks.
- Spoon and stir the yolks into corn meal mixture; set aside while you beat the egg whites stiffly.
- Fold them into the corn meal mixture, stirring well, but slowly.
- Pour into a greased casserole or cast-iron skillet.
- Bake in 350° oven for 45 minutes.
- Serve hot from the baking container with milk, apple butter, ham and beans!
