Grandmother'S Basic Custard Pie

Ingredients

  • 3 eggs, slightly beaten
  • 2 cups sugar
  • 3 tablespoons all-purpose flour
  • 1/2 cup melted oleo or butter
  • 1 cup diluted evaporated milk (3/4 cup milk and 1/4 cup water)
  • 1 teaspoon vanilla

Instructions

  1. Beat eggs slightly. Mix sugar and flour. Add melted butter to sugar mixture and eggs. Add diluted milk and vanilla or lemon juice. Beat until mixed well and pour into two 9-inch unbaked pastry shells. Bake in 400 degree oven 10 minutes and then 325 degrees approximately 25 minutes until done and slightly firm to touch.
  2. Use this basic custard recipe and make the following variations: SWEET POTATO CUSTARD: 1 1/2 cups mashed sweet potatoes, 1 teaspoon cinnamon; COCONUT: 1 cup flaked coconut, 1 teaspoon lemon juice; CHOCOLATE: 1/4 - 1/3 cup cocoa added to sugar mixture.
