Ingredients

  • 3 young unpeeled cucumbers
  • 1/4 tsp. onion juice or onion flakes
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. grated horseradish
  • 2 c. tomato or V8 juice

Instructions

  1. Wash and dry the unpeeled cucumbers.
  2. Grate the cucumbers and combine with the remaining ingredients in a bowl.
  3. Chill the mixture in the refrigerator.
  4. Serve in small cocktail glasses with crisp whole wheat or rye crackers.
