Green Chile Cheese Corn Bread

Ingredients

  • 1 c. self-rising flour
  • 2 Tbsp. sugar
  • 1 Egg Beater (1/4 c.)
  • 1/2 c. skim milk
  • 1/2 c. grated nonfat Cheddar cheese
  • 1/2 c. whole kernel corn, drained
  • 2 Tbsp. liquid Butter Buds
  • 2 Tbsp. canned green chiles, drained

Instructions

  1. Preheat oven to 400°.
  2. Mix all ingredients in a bowl and stir just until flour is moistened.
  3. Batter should be lumpy.
  4. Spread evenly in a loaf pan sprayed with nonfat cooking spray.
  5. Bake 35 minutes or until golden brown.
  6. Serves 8.
