Ingredients

  • 1 large garlic clove, minced
  • 2 1/2 Tbsp. olive oil
  • 1/2 c. dry white wine
  • 3 Tbsp. lemon juice
  • 2 Tbsp. capers
  • 1 1/2 lb. Pacific halibut fillets
  • pepper

Instructions

  1. In a 6 to 8-inch frying pan over medium-high heat, stir minced garlic in 1/2 tablespoon olive oil until limp, about 2 minutes.
  2. Add dry white wine, lemon juice, and capers to the pan.
  3. Bring to a boil, uncovered, over high heat until the sauce is reduced to 1/2 cup, about 3 to 4 minutes; keep the sauce warm.
  4. Meanwhile, season halibut fillets with pepper.
  5. Cook halibut fillets in a separate skillet over medium-high heat until golden and cooked through, about 3-4 minutes per side.
  6. Serve the cooked halibut with the sauce spooned over the top.
