- Mix sugar, cornstarch, and vinegar in a saucepan and bring to a boil; cook for 5 minutes.
- Pour the hot mixture over the drained beets in a saucepan and let stand on the back of the stove for 30 minutes.
- Put the saucepan on low heat just before serving.
- Add butter and stir until melted before serving.
