- Place a scallop and a pineapple wedge at opposite ends of each strip of bacon.
- Roll the bacon strips toward the center so that the scallops and pineapple are wrapped in bacon.
- Place 2 bacon-wrapped scallops and pineapple wedges on skewers.
- Broil until the bacon is crisp, about 10 minutes, turning to brown on all sides.
- Remove the skewers carefully and place 2 on each slice of buttered toast.
