Ingredients

  • 1 lb. shrimp
  • 2 cups rice
  • 2 slices bacon
  • 1 small onion
  • 1 medium bell pepper
  • salt

Instructions

  1. Cook rice and set aside.
  2. Fry bacon until crispy, then remove and drain.
  3. In the bacon drippings, sauté chopped onion and bell pepper until soft.
  4. Add shrimp to the vegetables and cook until pink.
  5. Drain bacon and chop into pieces.
  6. Mix cooked rice with the shrimp, bacon, and sautéed vegetables.
  7. Season with salt and pepper to taste.
  8. Simmer the mixture for 30 minutes before serving.
