Ingredients

  • 16 oz. can beets
  • 8 oz. can pineapple chunks
  • 1/4 cup lemon juice
  • 2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Heat beets in their own juice.
  2. Add drained pineapple chunks and heat until simmering.
  3. Retain the liquid from the pineapple.
  4. Stir the pineapple liquid, lemon juice, and cornstarch together.
  5. Stir into the simmering beets.
  6. Cook and stir until thickened.
