Ingredients

  • 1/2 lb. elbow macaroni
  • 2 c. cooked ham, cubed
  • 4 boiled eggs, chopped
  • 1/3 c. minced onion
  • 11 oz. can Cheddar cheese soup
  • 1/2 c. sour cream
  • 1/2 tsp. dry mustard

Instructions

  1. Cook the elbow macaroni until al dente; drain.
  2. In a large bowl, combine cooked macaroni, cubed ham, chopped boiled eggs, minced onion, Cheddar cheese soup, sour cream, and dry mustard; mix well.
  3. Pour the mixture into a buttered 2-quart casserole dish.
  4. Top the casserole with potato chips.
  5. Bake in a preheated oven at 350°F (175°C) for 40 minutes until thoroughly heated and bubbly.
