Heavenly Collards

Ingredients

  • 1 large bunch collard greens
  • 1 small pkg. frozen whole okra
  • 1 medium onion, diced
  • 3 slices thick sliced bacon or hog jowl, cut up into small pieces
  • 1 tsp. sugar
  • 1 Tbsp. salt

Instructions

  1. Saute onion and bacon or hog jowl together and set aside. Don't drain.
  2. Wash collard leaves thoroughly.
  3. To chop collard greens, just stack 7 to 8 leaves, roll them up and chop.
  4. It makes chopping much faster.
  5. In large pot, add collards to boiling water. They will all fit as they begin to wilt.
  6. Boil for 1 to 2 minutes after all collards are in pot.
  7. Pour off water.
  8. Cover collards with fresh water.
  9. Add all other ingredients and cook 2 hours on low to medium heat.
  10. Collards will cook down and almost all water will be gone.
