Instructions
- Preheat oven to 400 F (200C).
- Slice vegetables medium thick.
- Place in a large bowl and baste with olive oil.
- Place oiled veggies on large baking sheets. Be sure not to stack veggies on top of each other.
- Season with herbs, garlic salt and pepper to taste.
- Roast on top rack of oven for 20 - 30 minutes or until veggies begin to brown.
- Remove and serve hot or cold.
