Ingredients

  • oil
  • pepper
  • bell peppers
  • portobello mushrooms
  • rosemary
  • zuchinni
  • thyme
  • beleive will raost
  • garlic
  • red onion

Instructions

  1. Preheat oven to 400 F (200C).
  2. Slice vegetables medium thick.
  3. Place in a large bowl and baste with olive oil.
  4. Place oiled veggies on large baking sheets. Be sure not to stack veggies on top of each other.
  5. Season with herbs, garlic salt and pepper to taste.
  6. Roast on top rack of oven for 20 - 30 minutes or until veggies begin to brown.
  7. Remove and serve hot or cold.
